Here's a collection of our recipes, as well as recipes submitted by friends and lovers of Mr. Stew's Chipotle Sauces.
Basic Chicken Wings
There may be no greater debate in the 'wing world' bigger than whether to go naked or not. No, we're not talking about clothing, but rather should you bread your wings or not. We prefer breaded wings, so we've put our breading recipe below.
You can prepare your wings by baking, grilling or frying. We recommend deep frying for a nice crispy wing, but the choice is yours. We suggest picking up wingettes and drumettes at your local butcher shop or grocery store, but you may have to get wings and cut them up yourself. No matter how you do it, take the wings and dredge them in your breading mix, and place them in a dish large enough to hold all the wings you're going to fix. Once you finish breading them, place them in the refrigerator for at least 30 minutes. This lets the breading 'set up' and helps make for a crispier wing.
Get your frying set-up ready by heating canola or peanut oil to 350 degrees. Don't let your oil get too much hotter than this; above 400 degrees bad things happen to the flavor of the oil which limits the number of times you can use it. Place your wings in the oil and cook for 12-15 minutes. Watch your oil temperature, you may need to boost the heat just a touch once you start the cooking process to keep it at 350 degrees. While your wings are cooking, heat your Mr. Stew's Chipotle sauce in a pan to just short of a boil. When time is up, remove the wings and place on a cooling rack (place paper towels under the rack to catch any drips of excess oil). Place your wings in a bowl, cover with Mr. Stew's Chipotle sauce, toss or stir to coat the wings. Or give everyone their own bowl of sauce and let them dip their own wing. Eat and Enjoy!
*Serving Suggestion: If you'd like your sauce a bit more "silky", try melting a stick of unsalted butter in the sauce before serving.
Combine in a bowl:
3 cups of all purpose flour
1 teaspoon baking powder
2 tablespoons garlic powder
1 tablespoon onion powder
1 tablespoon cayenne pepper
1 tablespoon salt (I prefer using sea salt)
1 tablespoon FRESHLY ground black pepper
Dredge your wings in this...then fry 'em and eat 'em!
Marinade Recipe
Place your selected meat (chicken, pork or beef) in a zip-type plastic bag with enough Mr. Stew's Chipotle Sauce to coat the meat. Mix it around well and place in the refrigerator for at least one hour. Remove meat and discard the bag with marinade. Grill or pan fry the meat while basting with Mr. Stew's Chipotle Sauce. Eat and Enjoy!
